The name of the scissors refers to the method of working with two fingers, ni - two, giri - finger. The name should not be confused with Ni-giri sushi, in which the fish is held together using two fingers. The scissors themselves are made of high-carbon steel, which is not often used in Europe for this type of tools. The materials used make their blades second to none.
